This month’s #BarNone feature, Lauren Darnell (@lilfilthy), made her way from the restaurant industry to behind the bar where she found her love for mixology.

1. Tell us who you are, where you’re from, etc.
“I’m Lauren Darnell and I’m originally from Detroit but I grew up in downtown Issaquah. I ran to capitol hill as soon as I graduated high school and I’ve been living here ever since (17 years ago). I love Seattle and this is where I envision growing old.
2. What’s your bartender story? How did you get into it?
I started off as a barista when I was 16. I loved it. It was a creative way to make people happy every morning. I moved to capitol hill and changed locations. I lived with a bunch of girlfriends and some of them worked in restaurants. I loved going in and drinking wine and dining. When one of them was promoted to barback, I was asked to fill her spot as a busser. So I ran Starbucks stores and worked twice a week as a busser. I loved it and was hooked. Many years down the line I was running this independent coffee shop and asked by a friend to come work in fine dining. So I did, with a focus on helping the staff with wine knowledge. I jumped in and became the lead server in 6 months. Was asked to train in bartending, so I did and I was in my element. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
I love being behind a bar and working with liquids. I ended up running the bar program shortly after. About 2 years later I was really feeling the urge to move into a cocktail-focused bar. Soon after I was asked to interview at @hideoutseattle. The rest is history.
3. What’s your favorite cocktail to serve and why? How do you usually match a cocktail to a person or setting?
Many people ask what my favorite cocktail is. It’s a daiquiri! But really I don’t have a favorite. Simple, depending on my mood I want different style drinks. If I only liked one style of drinks I don’t think I would be a very well rounded bartender. I focus more on the customer and what they want, flavors and spirits they enjoy and the ones they don’t. I’ll always try and push them on a touch of the strange if I can. I really enjoy watching people take the first sip of a cocktail they have never had.
4. Why do you use Scrappy’s in your cocktails? Has Scrappy’s improved the drinks you make? Favorite Scrappy’s Flavor?
I use Scrappy’s because it’s the perfect way to add depth and complexity to a cocktail. That added layer to really make your drink fucking perfect.
5. What’s your idea of the perfect drink (location, circumstance etc)?
The perfect situation for the best drink really combines who you’re with and the setting that is exciting or puts you at ease. Whatever works for you. If you have the first two and then your tender listens and can find that drink that fits you, well that’s the perfect storm to me.
I’ve been blessed to have amazing cocktails all over the world. I’ve liked so many for a different reason and I’m still looking for the perfect storm.
