Bar None #16 // Martin Eisman

For our most recent Bar None feature we visited Amsterdam, the capital city of the Netherlands (flag) to catch up with the bar manager of @bluespoonamsterdam, Martin Eisma (@stirredovershaken). We explored his journey as a mixologist, his favorite drink, and Amsterdam’s highly-wrought cocktail scene.

1. Tell us who you are, where you’re from, etc.

“My name is Martin Eisma. I was born on the Southern Dutch coast, yet I grew up in the east of the Netherlands. I’m currently the bar manager for Bluespoon bar in Amsterdam.

2. What’s your bartending story? How did you get into it?

I grew up in a hospitality family – since the age of twelve, my parents have told me that I must work hard if I ever want to achieve anything. In the beginning, I simply wanted to work behind the bar and get my first steps in the industry. Needless to say, I fell in love with this world, but I decided to do it in quite a different way than the rest of my family.” – Martin Eisma

3. What’s your favorite part about cocktail culture in Amsterdam. How does this influence your craft?

I believe the scene in Amsterdam is still quite young but filled with obsessed people with their own style. This creates a very dynamic and creative scene with very little rules. The cool thing is that the guests we get in our bars are open to being surprised and mostly don’t just go for their “usual” recipe.

This is actually my favorite part, we get the room to be creative in a new scene where the sky seems to be the limit.

4. Favorite Scrappy’s Flavor? Why do you use Scrappy’s in your cocktails? Has Scrappy’s improved the drinks you make?

It’s very hard to pick a favorite (bitter), but I’d have to go for Lavender. The reason why I use them is very simple, they are incredibly potent, natural in flavor and they hold up super well through any kind of preparation of a cocktail. They’re perfect (dare I say invaluable) for giving complexity, depth and balance to any drink.

5. What’s your idea of the perfect drink (location, circumstance, etc.)? (or what’s the best drink you’ve ever had?)

This is such a hard question to answer. I think that there is no such thing as the perfect drink, but given the right circumstance, there is a thing like the perfect drink for that time. As you long as you can share it with the right person at the right place.

Aside from that, the things that would be important for such a drink, are creativity (pushing your idea’s of what is possible), balance, complexity and the story around the drink. If all of these boxes are ticked.. you have your perfect cocktail.”


“Where Everything Grows”

50ml Tanqueray Ten
15ml Creme de Violette
15ml white chocolate liqueur infused with beetroot and carrot pulp
30ml lime juice
20ml beetroot/carrotshrub
1 eggwhite
2 dashes Scrappy’s Lavender bitters
2 Saline solution

Technique: dryshake – shake – finestrain

Garnish: dried carrot skins – beetroot crisp – violets – spray Talisker infused with peaty whisky.
